Johnnycake Muffins
Ingredients:
4 Tbsp. Vegetable Oil
3/4 Cup Sugar
2 Eggs
4 Tbsp. Butter, melted and some to grease pan
2 Cups Flour
1 Level Tsp. Baking Powder
3/4 Cup Cornmeal
1/2 Tsp. Salt
1 Tsp Baking Soda dissolved in 1 3/4 Cup Buttermilk
Preheat oven to 350
In a bowl, beat together oil and sugar. Add eggs, beat well. Add melted butter and beat well.
In another bowl, combine flour, baking powder, cornmeal and salt. Add alternately to egg mixture with the buttermilk and baking soda mixture. Mix thoroughly.
Pout batter into buttered muffin tins, 10 inch skillet, 8 inchcake pan, or 9 inch round.
Bake 35-40 minutes or until toothpick comes out clean. (For muffins, cook time may be less)
